Would it be possible to make this in a 9 inch cake pan instead of a loaf pan (which I do not have)…and perhaps double and make two — one for now one for freezing? I doubled the recipe and used white whole wheat flour, plain yogurt for the sour cream, and only 1 1/4C sugar. Can’t wait for bananas to ripen to make it again. I used 100% dark cocoa powder instead of the unsweetened And larger dark chocolate chip morsels mixed with a few milk chocolate and these are some of the best “muffins” I’ve ever had. You can use it for a plain banana bread, a peanut butter banana bread, or a chocolate chip banana bread. Love them! I would not modify a thing.
