Don't over-mix the batter. Seriously, I think these may be the best banana muffins I’ve ever had. This will be my new favorite when it comes to banana bread. Husband liked them too. Instead of muffins I made 3 mini banana bread loafs. I used three small bananas, about 1/2 cup applesauce. I substituted a yogurt butter blend for the butter and it came out very moist and delicious.
